Groote Post Seasalter Sauvignon Blanc 2018The Seasalter is wonderfully expressive on the nose and the palate with captivating notes of citrus, stone fruit and green apple together with hints of fynbos and kelp, sea-breeze and a touch of oak. Rich, layered and long, this subtly powerful blend is intense but not weighty: an elegant well balanced wine showing typical Darling minerality, vibrant acidity and some leesy complexity before a saline finish.

In The Cellar
90% Sauvignon Blanc , 10% Semillon. 50% of the Sauvignon Blanc was fermented and aged for 8 months in a 300 litre French Oak barrels. The remaining components were fermented in stainless steel tanks and left on the fine lees.

Accolades
The grapes of both cultivars were harvested on the same day and fermented together in open top tank fermenters. The free run juice was kept separate and underwent malolactic fermentation in 500 litre barrels. After malolactic fermentation the wine was racked and then put back in barrel for 14 months. The wood selection was 60% new 500 litre oak barrels and 40% older 500 litre oak barrels.

Tasting Notes
This wine has an abundance of cedarwood, plum,white pepper and violet flavour on the nose. Cinsault flavours of cherries and strawberries are prominent on the palate. The wine is very well structured and has great length.

2015 was an excellent wine year with outstanding sugar and phenolic ripeness achieved throughout both cultivars.

Groote Post Kapokberg Chardonnay 2017Kapokberg translated as “snowy mountain”. In days gone, this hill, covered in white Spring flowers, resembled a snow capped mountain. At 459m above sea level, it is the highest hill at Groote Post and bears the name of our vineyard selection wines.

TASTING NOTES

An elegant chardonnay with a nose of almonds and lashings of butter and marmalade on the Palate. The wine is well integrated with the wood and has a creamy palate.

THE HARVEST

The trend is that our harvests are getting earlier and earlier. The old vine chardonnay produced yet another outstanding crop.

IN THE CELLAR

The juice was fermented in 300L French Oak barrels and aged on the lees for 10 months. 25% New oak and 75% older oak was used.

Tasting Notes
Ripe, red fruit upfront on the nose with early morning farmyard blossoms. The palate is voluptuous and beautiful cherry notes with silky oak tannins support the structure on the finish.

About The Harvest
It’s exciting times with our Pinot Noir with new sites and different clones coming into production. The 2015 crop was one of our largest, but even with this increased yield the fruit developed very well with the berries achieving even phenolic ripeness.

The wine was fermented in open barrels and also in stainless steel tanks. The wine spent 15 months in 500L French Oak barrels. 15% new oak, the rest in older barrels

Tasting Notes
This MCC is salmon-pink tinged with flavours of strawberry and hints of yeasty biscuit. It is crafted according to the age-old tradition of second fermentation in the bottle.

70% Chardonnay, 30% Pinot Noir

In The Vineyard
The fruit is carefully selected from slopes overlooking the Atlantic Ocean.

In The Cellar
To maintain consistent quality and style we kept this MCC non-vintage. The final blend before second fermentation can consist of two to three different vintages.

All the grapes are whole bunch pressed. Only the best quality juice is used for the initial fermentation. After fermentation the wine is blended with previous vintages and a final blend is then bottled for the second fermentation. The second fermentation and ageing normally takes 10 to 12 months.

About The Harvest
2018 was a challenge for the fruit driven white varietals. Weather patterns are definitely changing as this was a long, dry and warm summer. These unfavorable conditions were countered by good canopy management and early morning picking.

After three years of lower than normal rainfall we were concerned that it would have a negative impact on the vines regarding production and overall ability for vines to ripen the grapes. In years like this you realize how adaptable vines are in tough conditions. We were down on production but the quality of the wine is amazing.

About The Harvest

In The Cellar
The challenge in the cellar was to capture the full potential of each batch of grapes. After sorting, destemming and crushing, 50% of the grapes had skin contact for 6 to 12 hours. Only the free-run juice were used for this wine. The wine was fermented in stainless steal tanks and left on the lees for 2 months.

Grapefruit and citrus flavors are in abundance on the nose and palate. This vintage has fresh acidity, beautiful minerality, vibrant, racy and zesty structure.

Ageing Potential
This vintage has a full and concentrated structure with very good ageing potential.

In The Cellar
Our first vintage since 1999 not using the same Chardonnay sites. First Substantial fruit from our new site was added to this 2018 Unwooded Chardonnay. It immediately made a contribution to the variation and complexity of this final blend. Overall even with the drought, the chardonnay vineyards produced beautiful ripe and healthy fruit.

During the crushing and fermentation kept at low temperatures. Fermentation is only done in stainless steel tanks, no wood is added. We have the wine on the lees for up to 3 months depending on the vintage.

Tasting Notes
This wine display beautiful peach, grapefruit and pineapple fragrances on the nose and ginger and spice abound on the palate. The wine has a long , lingering mid palate with generous acidity carrying the wine through to the end.

About The Harvest
The summer was a challenging one with high temperatures and dry conditions. We left more leaf in the canopy to protect the grapes and gave supplementary irrigation to help the ripening. We were able to harvest at optimal ripeness maintaining fruit and acidity.

In The Cellar
The grapes were destemmed and only the free-run juice was used. Fermentation took place in stainless steel tanks for 14 days where after fermentation was stopped by cooling the juice to 6˚C. The wine spent 2 months on the lees.

Tasting Notes
Berry and plum flavours are prominent on the nose, supported by a subtle hints of mint, resulting in a wonderful flavour spectrum. A juicy mid palate is supported by soft silky tannins and ageing in oak barrels.

About The Harvest
The crop was thinned to one bunch per shoot. In so doing we achieve even ripening of the fruit and more intense flavours and sof tannins.

In The Cellar
The grapes were carefully selected over the sorting table. The grapes had cold maceration for 2 days in stainless steel tanks and open tanks. The juice was pumped over and the cap punched down three to four times a day. The juice was left on the skins for 14 days after fermentation. Malolactic fermentation and ageing took place in 300L French Oak barrels. 30% new wood, 40% 2nd fill and 30% 3rd fill.

Tasting Notes
This vintage displays white pepper and violets, which are typical of our region. Smokey spice and saltiness fill the palate.This is an elegant Shiraz with well rounded tannins that linger.

This west-facing vineyard block is a warmer site and with the vines at 14 years maturity is starting to produce consistent and outstanding Shiraz.
About The Harvest
The Glen Rosa soil, a well-balanced combination of gravel and clay, also makes a quality contribution. Dryer conditions added to smaller berries that contributed to more concentration in the wine.

In The Cellar
Fermentation is split between using open top tanks for punching down the skin cap and closed stainless steel tanks for pumping the juice over the skins. The fermenting grapes underwent maceration for 2 weeks. The goal was to achieve a complex and versatile Shiraz. The wine matured for 14 months in 300L oak barrels of which 25% was new oak and 75% older barrels. 10% American oak.

About The Harvest
We went into the 2018 harvest with the lowest winter rainfall in three years since 1933. Focus was therefore to balance optimum ripeness before stressing out the vines. More open canopies and cooler but sunny conditions helped to achieve that. We also harvested slightly earlier on sugar ripeness but we still achieved to capture nice fruit.

In The Cellar
The two varietals that make up the blend are each vinified separately as individual wines. Stainless steel tank fermentation and reductive winemaking are followed. These two components are then blended in different ratios until we are satisfied that we have the final blend that meets The Old Man’s approval.

Tasting Notes
A down to earth, ripe fruit driven blended red wine. Cherry, mulberry and cedar wood are prominent on the nose with soft sweet tannins on the palate giving a smooth finish.

About The Harvest
This is a fantastic vintage. Optimal ripeness was obtained in all four cultivars.

In The Cellar
During winemaking the cultivars were kept apart and aged in third fill 300L French Oak barrels and in stainless steel tanks with staves. At 10 months the different components are blended after rigorous tasting sessions with our Old Man, Peter Pentz.
