Fable Mountain Vineyards Belle Flower Rosé 2015

Named after the abundance of beautiful wild flowers that appear every spring on the Fable Mountain, this provence style rosé is made from carefully selected parcels of Grenache, Syrah and Mourvèdre.

The rosé is bone dry with a low alcohol of only 12%. The wine has beautifully layered aromatics of wild berries and roses which supported by a powerful yet precise palette. The wine is aged in concrete egg for 12 months on its lees.

Only 200 cases made.

MATURATION

Wine stays on its lees in concrete eggs for 12-18 months before being blended and bottled.

TASTING NOTES

The colour is bright, pale pink with salmon hues. The nose is beautifully layered and complex with wild berries, roses and white flowers with a subtle suggestion of dill and wet stone minerality. The palate is powerful yet precise with soft creamy layered flavours of berries, dill and hints of wood. The finish is long and mineral with a fresh lingering acidity.

CELLARING

Drink now or will age for up to 5 years.

WINEMAKING

The grapes for this Rosé are carefully selected for their quality and fragrance. The blend is made up of Grenache, Mouvèdre and Syrah, just like the Rosé wines in Provence. The grapes are picked early so that we can maintain a good alcohol in the final wine.

They are then transported by a refrigerated truck and go into a cool room when they arrive to get the temperature to about 5 degrees. The grapes are then whole bunch pressed, before being settled and racked into concrete eggs where they undergo a natural fermentation. All the different batches of fruit are kept separate and blended in the end. Malolactic fermentation is allowed to go through and the final wine stays on the lees in concrete eggs for 12-18 months before blended and bottled.

Chenin Blanc (Swartland), Chardonnay (Elgin), Rousanne, Viognier and Grenache Blanc (Voor Paardeberg).

BLEND
41% Chenin Blanc, 18% Grenache Blanc; 17% Chardonnay 14% Viognier; and 10% Roussanne

MATURATION
12 months on lees. 70% fermented and matured in 500l Oak barrel, remaining 30% is fermented and aged in concrete eggs.

TASTING NOTES
It is pale straw in colour. On the nose there are inviting and intriguing floral aromas mingling with honey, white
peach, pear and citrus. On the palate crisp minerality and stone fruit show with pithy textural core.

The finish is subtle and lingering, fresh and elegant with unravelling layers.

WINEMAKING
Named after a bird of prey that can often be seen catching the thermals high above the Fable farm, the Jackal Bird is a wine that uses the famous South African old vine Chenin Blanc as a foundation and augments it with aromatic and textural Southern Rhône cultivars. This wine is essentially a winemakers wine, as it is all about the blend but vineyards sites are
important and we source our grapes from areas where each variety grows best. We not only get different components for the blend because of the different characteristics of the cultivars and sites but also from the winemaking techniques in the cellar. We use
oxidative and reductive approaches, cold soak skin contact, and solids and clean ferments. No yeasts are ever added to any ferment and the wines spend the majority of the year on their lees. We also use a variety of vessels: 500l Oak barrels, Nomblot concrete egg tanks and some stainless steel. We aim for a fruit driven wine, that is supported by a more savoury solids and skin contact carrier as well as a little oak and lots of complexity.

Fable Mountain Vineyards Night Sky 2013

SOURCE
The Night sky is named after the vast and beautiful stars that light up the nights on our isolated farm and is also a nod to biodynamics, which we practice meticulously in the vineyards.

BLEND
Syrah 50%; Grenache 35%; Mouvèdre 15%

MATURATION
This wine is matured for approximately 24 months in 500L oak barrels of which 20% are new.

TASTING NOTES
It is crimson in colour and exhibits aromas of carnation, rose spice and fynbos with hints of jasmine and undertones of herbs. On the palette there is soft cherries, fragrant tannins and red berry fruits with a smooth lasting finish.

CELLARING
Drink now or cellar for up to 10 years.

WINEMAKING
A blend of Syrah, Mourvedre and Grenache the wine is made in a southern Rhone style. All varieties are grown on the farm and are hand picked into fermentation vessels of either concrete or stainless steel. The ferments are allowed to proceed naturally
and are hand plunged as required until they are dry.

Once the ferment is finished the vessels are allowed to undergo post ferment maceration on the skins. This usually lasts around 8 weeks. They are tasted often and when they are ready, pressed off into 500L French oak barrels. The wine spends around 24 months in oak, of which 20% is new.

Fable Mountain Vineyards Syrah 2013

The Fable Syrah represents the purest expression of Syrah on the farm. The focus is on quality fruit and a purity and integrity of place. We aim to structure all components of the winemaking process so that balance is the result.

BLEND
Syrah: 100%

MATURATION
Once in the maturation phase the wines finish the malolactic fermentation and are aged for up to 24-30 months in 500L oak barrels. 20% of the oak we use is new, the rest is older French oak.

TASTING NOTES
The 2013 Syrah is a bright crimson color with a distinctive ruby edge. A powerful yet elegant wine of cranberries, ripe fruit, elderberries and spice, with hints of fynbos from the slopes of the mountains where the vineyards are grown. The palate is beautifully layered with red fruits and cherries as well as smoked meat supported by a refined silky texture. A truly magnificent wine from the most magical of vineyards in Africa.

CELLARING
This wine is very youthful and will continue to age and develop over the next 15 years.

WINEMAKING
The Syrah is picked in small batches specific to areas of the vineyards that are performing the best. The grapes are hand sorted and gravity delivered into 500L oak puncheons, which have been placed vertically as small open top fermenters. Fermentation takes place naturally with no additions of any kind. The cap is hand plunged as needed during fermentation and once the fermentation
is complete the new wine enjoys a long slow maceration.

The length is dependent on the wine but normally takes between 8 to12 weeks. The wines are tasted often during this time and when the structure is perfect the wines are pressed to maturation barrels.
