Painted Wolf The Den Sauvignon Blanc 2015

Painted Wolf The Den Sauvignon BlancThis is an elegant wine with gentle aromas and flavours of tropical fruits, figs and minerality. This Sauvignon has a rounded textured mouth feel, good balanced and supple acidity. The Den wines are comfort wines, and this wine delivers just that.

This wine is produced from a number of vineyards in the Swartland and Darling

Great care has been taken to ensure that the grapes were picked at the correct time.

It is blended from grapes grown on a warm site and those from cooler vineyards. It received the best possible attention, being blanketed with CO2 throughout the crushing and pressing process

This wine should be drunk within a year or two of the vintage.

Painted Wolf The Den Chenin Blanc 2015

Painted Wolf The Den Chenin BlancThis wine has a lively aroma and flavour of Persian melon and pear with an underlying savoury minerality. The wine has a great texture and a long layered finish with bright acidity keeping it fresh and vibrant.

Chenin Blanc is harvested from a number of blocks on farms in the Swartland region, both irrigated and dry farmed vines of 20 to 40 years old. Finished with around 10% Chardonnay.

This wine was made from ripe grapes picked to deliver a rich flavour and texture. It is made up from 3 different tanks produced in different ways. Approximately 50% of the wine was made with clean cold tank ferment, with about 25% being fermented with a small number of French oak staves and the further 25% balance, a “funky” ferment with lots of lees in the tank and a very slow fermentation to build glycerol and texture in the wine. The final blend was put together from these components.

This wine should be drunk within 2-3 years of the vintage.

The Den Chenin Blanc is delicious on its own. The wine has tons of flavours and poise and is a versatile partner for many different dishes.

Painted Wolf The Den Rosé 2015

Painted Wolf The Den RoséA bright fruity wine with strawberry, cherry and cranberry flavours, a gentle underlying minerality and a fresh lingering finish.
The Vineyard

Pinotage grapes were sourced from a number of blocks of older vines in Paarl. In the past vintages the grapes were sourced from Southern Cross vineyard, from our Painted Wolf pack members Ros and Pete Koch. This year we harvested their grapes for red wine, and subsequently sourced grapes for this rosé elsewhere

I set out to make the most delicious and compelling dry rosé possible from Pinotage. The grapes are hand harvested into small baskets and taken to the cellar where they are destalked, gently crushed, and cooled before being left on skins for roughly 6 hours. Juice is then drawn off the skins and cold fermented in tank.

This wine is delicious as a young wine but will gain complexity and interest with a couple of years of bottle aging.

Painted Wolf The Den PinotageNeil Martin writes “The 2014 The Den Pinotage has a pleasant mulberry and iodine-scented nose that is clean and fresh, perhaps one you might describe as “commercially savvy.” The palate is medium-bodied with chewy black fruit laced with melted tar, Provençal herbs and fennel, leading to a nicely poised finish. This is a fine Pinotage from Painted Wolf.”

The grapes for this wine have been harvested from Kasteelsig in Malmesbury and from Leeuwenkuil on the Agter Paarl/ Swartland border.
Winemaking

Pinotage was harvested over a two week period starting late Jan 2014. Most of the grapes were destalked and fermented in tanks with various staves. Malolactic and maturation was completed on staves. Approximately 15% of the wine was fermented in small open fermenters and hand punched before being pressed off prior to full dryness into small French and American oak barrels.

Pinotage is the best wine in the world to pair with Mexican dishes such as Fajitas or that glorious confection of chicken, chocolate, cumin seeds, smoky ancho chilies, pumpkin and sesame seeds- Mole. It is also very good with other flavoursome American regional specialties such as with Carolina Pulled Pork or smoky Texas B.B.Q beef rib. Painted Wolf The Den Cabernet Sauvignon 2013

Painted Wolf The Den Cabernet SauvignonA medium to full bodied wine with typical Cab flavours of black current, brambly fruit, cigar box augmented by toasty oak. The wine has a lovely rich texture, soft ripe tannins with a long fruit driven finish.

Cabernet Sauvignon is harvested from a vineyard in the Botteleray region of Stellenbosch. We have blended 10% Swartland merlot from Kasteelsig vineyard and 4% Shiraz sourced from out three partner vineyards

This wine was made from ripe grapes picked to deliver a rich flavour. Cabernet fermented in tank on a blend of French oak staves, and then completed malolactic and maturation on staves; the wine was finished off with 10% Swartland Merlot and 4% Shiraz, both of which were matured in a mixture of new and older oak barrels.

This wine is good now, and will continue to improve over the next 3-4 years.

Painted Wolf The Den Shiraz 2014

Painted Wolf The Den ShirazShiraz was harvested in the third week of Feb 2014. Most of the grapes were destalked and fermented in tanks with French oak staves, with malolactic and maturation being completed on staves. Approximately 20% of the wine was fermented in small open fermenters and hand punched before being pressed off into small French oak barrels of varying ages. This is a Rhone blend component from Agter Paarl and includes Shiraz, Mourvedre and Cinsault which give this wine some additional spice, juiciness and wood.

“Emma and I lived and worked at a rustic bush camp in Botswana’s Chobe National Park. When we left, our dream was to create a business that would raise money and awareness for conservation.

Our dream took some years to materialise, eventually becoming a reality with the establishment of Painted Wolf Wines. The charisma, teamwork and tenacity of Painted Wolves (African Wild dogs) inspired us. In spite of these great qualities, they are our most endangered large carnivore and urgently need help to avoid a steady slide into extinction.

I love mountain biking…. cycling and wild dogs have much in common. They require stamina, persistence and balance and a combination of individual prowess and team work for success. Pedals 4 Paws wilderness cycle adventures raise money for conservation…..and we donate money from each bottle sold towards the conservation of Wild Dogs. An exciting white Cape Blend with layers of stone fruit and citrus complimented with well- judged oak. The wine is beautifully balanced with a full rich mouth feel and a bright long finish.

Chenin and Viognier are sourced from our pack members vineyards in Simondium-Paarl and Malmesbury in the Swartland, and the Roussanne grapes purchased from a grower in the Perdeberg of Paarl.

The grapes were hand-picked and whole-bunch pressed. Most of the components were barrel fermented with natural yeast.

This wine is drinking well now, and will continue to improve over the coming few years.

Painted Wolf Cape Hunting Peloton RougeBlend: Pinotage 86%, Grenache 8%, Cinsault 6%

A lively, spicy Cape Blend with a full rich mouth feel and a velvety long finish.

Sourced from our pack members vineyards in Paarl, Stellenbosch and the Swartland.

The grapes were hand picked  and crushed into small open fermenters hand punched 4 to 5 times daily during fermentation and pressed when just dry.

This wine will improve with a few years of bottle age.

Painted Wolf Black Pack Barrel Fermented Chenin Blanc 2012

Painted Wolf Black Pack Barrel Fermented Chenin BlancAn elegant wine with flavours of peach, lime, vanilla and a stony minerality. The wine has a lovely finessed texture with a long finish with just enough acid to keep it fresh and vibrant. The wine is sealed with a natural cork. 7200 bottles produced.

Chenin Blanc is harvested from two vineyards, Southern Cross in Simondium Paarl, and Leeuwenkuil in the Swartland. The vines on Southern Cross are dry farmed on granite soils, and are 28 years old. Leeuwenkuil has shale soils with vines of 15 years old. The split is 75% Swartland fruit and 25% Paarl fruit.

Southern Cross grapes were picked at 20 balling and fermented on heavy lees in 500 litre seasoned barrels for minerality – this wine went through malolactic fermentation. The Leeuwenkuil fruit was much riper and was fermented in barrel with wild yeast in 2nd and 3rd fill French oak barrels. Fermentation has been very slow.

This wine will develop in bottle over the coming 3-4 years, gaining complexity as it develops in the bottle.

The Wild Yeast Barrel Fermented Chenin is a complex layered wine, suitable for country cooking with a French feel.

Painted Wolf Black Pack Roussanne 2014

Painted Wolf Black Pack RoussanneA medium bodied wine with citrus, white peach and creamy aromas. The wine has great texture and a long finish with fresh acid keeping it vivacious and vibrant. Low alcohol of 12.7% gives the wine a grace not often experienced in SA wines. The wine is sealed with a Diam cork to retain freshness. We have made an elegant finessed wine to follow on from the 2011 which was rated a staggering 19/20 by top Swiss journalist Rene Gabriel and judged the top Niche white wine of 2012 by Classic Wine Magazine

Roussanne is grown by Willy Mostard on the South Eastern side of the Perdeberg. The wines are planted on decomposed granite soils.

The wine was fermented at Koopmanskloof in Stellenbosch in a large new 2000 litre oak tank before being decanted into 500 litre 3rd fill French oak barrels in which we had previously made viognier. Chenin Blanc lees were added back to the wine, which was stirred regularly. Malolactic fermentation was not encouraged. After 8 months in wood, the wine was bottled. Before being bottled we finessed the wine with a small quantity of fresh high acid Clairette Blanche and Grenache Blanc. Only 5,000 bottles were produced.

This wine may bottle age very well and could reward you with 5 or more years of cellaring.

Food Suggestions

The wine has lovely texture and some complexity. Serve with smoked snoek pate with apricot relish, or with a salad of roasted red pepper, Dalewood Huguenot Cheese and rocket with anchovy vinaigrette, or lovely ravioli filled with salmon served with salsa Verde. Roast duck with Honey, lavender and thyme would be seriously delicious with the wine.

Painted Wolf Black Pack "Penny" Swartland Viognier 2014

Painted Wolf Black Pack "Penny" Swartland ViognierA beautiful wine with an exotic bouquet of lime, stone fruits and spicy wood, tons of flavour and long poised finish. This is the part of a series of single vineyard and special wines from grapes produced by Painted Wolf Pack Members. Penny Voignier is named in honour of Penny Hughes, who sadly passed away in late 2014. It is a rare wine, made in tiny quantities.

Viognier grapes were sourced from a single block at Billy Hughes’ Kasteelsig vineyard in Malmesbury. The vineyard is east-facing planted on red Oakleaf and Glenrosa soils. These un-irrigated vines are organically certified. Attentive farming produces fruit with exquisite balance. Yields are naturally low at around 6 tons to the hectare.

The grapes were picked by hand into small baskets and taken to the cellar where they were whole bunch pressed, the juice settled and cooled and then moved into barrels. The wine was fermented and matured in a selection of new and second fill 500 litre French oak barrels. We used cultured strains and natural yeast strains.

3600 bottles produced.

Painted Wolf Black Pack Merlot Swartland 2011

Painted Wolf Black Pack Merlot SwartlandAn intense, individual wine brimming with flavours of velvety ripe plum, chocolate and violets with a silky mid palate and a long finish.
The Vineyard

Merlot grapes were sourced from Kasteelsig, a well known dry land organically farmed vineyard in Malmesbury owned by Painted Wolf pack member Billy Hughes. Yields are approximately 6.5tons to the hectare.

The grapes were hand picked into small baskets and taken to our cellar in Stellenbosch where they were destalked and gently crushed. The wine fermented in small open bins and was hand punched 4 times a day. We fermented with natural and commercial yeasts. When totally dry it was pressed into a mixture of new 80% and used 20% mostly French barrels to complete malolactic. The wine spent 14 months in barrels and was bottled May 2012. 6500 bottles have been produced

This wine will improve with bottle age and should peak round 2015 to 2017.

Painted Wolf Black Pack Shiraz 2010

Painted Wolf Black Pack ShirazA harmonious and balanced full bodied wine with juicy red fruit, savoury smoked ham, crushed white pepper and aromatic wood aromas that follow to a well balanced wine with a long finish. The wine has enough acid and grippy tannin to allow for bottle aging for a number of years.
Grapes were sourced from vineyards owned by our shareholder pack members, Kasteelsig in Malmesbury, Southern Cross in Paarl Simondium and Devon Rocks in Stellenbosch Bottleray. Each site has different terroir bringing a different component to the wine. Vines are between 8 and 26 years old and yields are between 7 and 9 tons to the hectare.

The grapes were handpicked in February and March 2010 in small baskets and taken to our cellar where they were destalked and gently crushed. The bulk of the wine fermented in small open bins where it was hand punched 4 times a day. Both wild and commercial yeast have been used. The wine matured in French, Hungarian and US barrels. The wine was blended in February 2011 and bottled in September 2011. A small quantity of Pinotage (4%) has been blended with the wine. 12000 bottles have been produced.

This wine will drink well as a young wine, but will definitely benefit from a number of years of bottle maturation.

Painted Wolf Black Pack Pinotage Stellenbosch 2011

Painted Wolf Black Pack PinotageA powerful and robust wine packed with flavours of ripe Berry fruits, peppery spice and creamy vanilla with evident ripe tannins and a long lingering finish.
Pinotage grapes were sourced from the Devon Rocks vineyard which is owned by Painted Wolf Pack member, Juergen Heinrich. Yields are round 8 tons to the hectare.

The grapes were hand picked into small baskets and taken to the cellar where they were destalked and gently crushed. The wine fermented in open fermenters being hand punched, and in tank with regular pump overs. Before the wine was totally dry, we pressed and placed in 2nd fill French oak barrels to complete alcoholic and malolactic fermentation. The wine was bottled in September 2010.
Approx 8000 bottles have been produced.

This wine will age well in bottle for a number of years.

Painted Wolf Black Pack Lycaon Swartland Grenache 2013

Painted Wolf Black Pack Lycaon Swartland GrenacheBlend: 95% Grenache, 5% Shiraz
A lovely rich mélange of sweet and crunchy red berry fruit and subtle pepper spice flavours and aromas harmonized with sweet oak. This is a very elegant wine with a gorgeous silky palate with a fresh bright finish.

Grenache is from Kasteelsig vineyard, owned by Painted Wolf Pack member Billy (Guillermo) Hughes, and are organically certified grapes. Soil is red Glenrosa with some Oakleaf – shale rich duplex soils. The vineyards are not irrigated. Kasteelsig vineyard supplies grapes for some of South Africa’s top boutique wines. Yields are round 6 tons to the hectare.

The grapes were hand picked into small baskets and taken to the cellar where they were destalked and gently crushed. The wine fermented in small open bins with 4 punch downs per day. When totally dry, we pressed into oak barrels to complete malolactic. The wine matured for 14 months in small French oak barrels roughly 30% new. A small percentage of Shiraz has been added to the blend. 3800 bottles have been produced.

This wine should age gracefully and drink well for up to 10 years from vintage.

The site is primarily red Glenrosa soil with some Oakleaf – both shale rich duplex soils and these vines are not irrigated. Kasteelsig supplies grapes for some of South Africa’s top boutique wines. Yields are around 8 tons to the hectare.

The grapes were hand picked into small baskets and taken to the cellar where they were hand sorted, destalked and gently crushed. The wine fermented with a mixture of natural and commercial yeasts in small open fermentation bins with 4 to 6 punch downs per day. Before the wine was totally dry, we pressed and placed it in oak barrels to complete alcoholic and malolactic fermentation. The wine matured in a mixture of French, Hungarian and American oak barrels for roughly 12 months, approximately 50% new wood.

8812 bottles have been produced.

This wine drinks well as a young wine, but will improve gaining additional complexity for at least 6 to 8 years from vintage.

Food Suggestions
This is a super food wine and pairs well with a lot of deeply flavoured dishes. It does well with exotic flavours and I would happily push out the boat and serve the wine with such exotic confections as Peking duck, Sticky sweet and sour pork belly, braised beef shanks with polenta and gremolata, wild mushroom risotto or Mexican-style ostrich mole.

Painted Wolf Black Pack "Pictus One" Swartland Red 2009

Painted Wolf Black Pack "Pictus One" SwartlandBlend: Shiraz 48%, Mourvedre 30%, Grenache 22%
Pictus is named for the scientific name for an African Wild Dog, Lycaon Pictus, meaning Wolf in Greek and Painted in Latin. Painted Wolf Pictus I (2009) is a wine made with meticulous care from the very best available grapes.
The art work for this wine label is ‘Snare and her siblings in the moonlight’, a painting by well known Zimbabwean artist Lin Barrie. This is the first of a series of wines which will each year carry a piece of work by a different artist.

An intense brooding full bodied spicy blend with good balance and a long finish.

Sourced from Kasteelsig in Malmesbury, Swartland, a vineyard comprising mainly red Glenrosa soil with some oakleaf – both shale rich duplex soils. The vineyards are un-irrigated, and are undergoing organic conversion – this is a vineyard which supplies grapes for some of South Africans top boutique wines.

The grapes were handpicked into small baskets and taken to the cellar. Grapes were all hand sorted and crushed into small open fermenters. Wine was fermented with a blend of natural vineyard yeast and commercial strains. We hand punched down the cap a number of times per day. The wine has been pressed in a basket press and aged in a blend of French (80%) and American (20%) 225 litre and 300 litres barrels for 18 months – with approximately 40% new wood. My ambition was to create a powerful satisfying wine with a rich harmonious palate and a long finish, and an excellent partner for a wide range of dishes. The wine was bottled in January 2011.

Pictus I (2009) will develop in bottle for 10 or more years.
